Great Summer Outdoor Meals

Heading into Summer means it is time for outdoor grilling. It is that time of the year to go outdoors and celebrate the 4th of July or any summer day with family and friends. Heartland Living is bringing you some of our favorite meals. Check out these recipes that are traditional burgers and chicken recipes, along with some healthy vegetables and refreshing tea. Warm Potato Salad

Simple and not your classic potato salad. Crisp bacon with Dijon, fresh chives, dill and soft boiled eggs.

INGREDIENTS:

6 slices of bacon
3 pounds mixed yellow and red baby potatoes, halved
Kosher salt and freshly ground black pepper
3 tablespoons extra virgin olive oil
2 tablespoons whole grain
Dijon mustard
1 tablespoon red wine vinegar
2 minced shallots
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh dill
4 soft boiled eggs, sliced or halved

INSTRUCTIONS:

1. Heat a large cast iron skillet over medium high heat. Add bacon and cook until brown and crispy, about 7 minutes. Drain excess fat and transfer to a paper towel-lined plate.

2. Place potatoes in a medium saucepan and cover with cold salted water. Bring to a boil and simmer until just tender, about 5 minutes; drain well.

3. In a large bowl, whisk together olive oil, mustard, vinegar, shallots, chives and dill; season with salt and pepper, to taste. Stir in potatoes and bacon until well combined. Top with boiled eggs.

4. Serve immediately.
