Great Summer Outdoor Meals

Heading into Summer means it is time for outdoor grilling. It is that time of the year to go outdoors and celebrate the 4th of July or any summer day with family and friends. Heartland Living is bringing you some of our favorite meals. Check out these recipes that are traditional burgers and chicken recipes, along with some healthy vegetables and refreshing tea. Garlic Lemon Kabobs

Tender and Juicy Chicken Kabobs with Lemon-Garlic Marinade

INGREDIENTS:

4 tablespoons olive oil, divided
1 diced shallot
3 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
1 tablespoon chopped fresh rosemary
3 cloves garlic, minced
3 teaspoons Dijon mustard
1 1/2 teaspoons Kosher salt
1 1/2 teaspoons ground black pepper
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 red onion, cut into 1 1/2-inch pieces

INSTRUCTIONS:

1. In a medium bowl, combine 2 tablespoons olive oil, shallot, lemon juice, lemon zest, rosemary, garlic, mustard, salt and pepper.

2. In a gallon size Ziploc bag, combine chicken and olive oil mixture; marinate for at least 2 hours or overnight, turning the bag occasionally. Drain the chicken from the marinade.

3. Put chicken and onion onto skewers and brush with remaining 2 tablespoons olive oil: season with salt and pepper.

4. Preheat grill to medium heat.

5. Add skewers to grill and cook, turning occasionally until the chicken is completely cooked through, about 10 minutes. Serve immediately.
