Easy and Healthy Back to School Lunch Ideas for Your Kids!

School season is almost here! It’s time for fun and healthy back-to-school lunch ideas that will have your kiddos looking forward to returning to the classroom.

While you can sometimes transform last night’s dinner into a lunch worthy of taking to school, it doesn’t always work out that way. When it comes to lunches, having the same thing every single day can get boring after a while. It doesn’t take long for kids to get bored with food, so a boring sandwich everyday won’t always do the trick. Healthy lunches can still be just as easy as those classic peanut butter and jelly sandwiches, but who doesn’t love a P&J? Some of the ideas I found probably are easier.

INGREDIENTS:

5 chicken breasts, shredded
3/4 cup mayo
1 cup celery, chopped
1/3 cup green onions, chopped
1/2 cup grapes, cut in half
1⁄2 cup of pecans
1/4 tsp black pepper
1 tsp salt

INSTRUCTIONS:

I start with fresh shredded chicken. If time is an obstacle (when is it not?) a store- bought rotisserie chicken works just as well. It’s also a great way to utilize leftovers from a roasted chicken made earlier in the week.

Season raw chicken breast with salt and pepper
Sauté chicken breast over medium low heat or you can boil in water until cooked thoroughly
While chicken is cooking, gather and wash veggies Chop celery, green onions, grapes and pecans, set aside

After chicken is cooled, shred with fork and add the remaining ingredients and mix thoroughly. Refrigerate mixture or eat immediately (I prefer to refrigerate for about an hour) Serve by itself, or it’s very good in a croissant.
