Quail Dinner Recipes by Chef Michael Styer


1 pound Applewood smoked bacon, medium diced
1 Tablespoon minced garlic
1  Tablespoon minced shallot
2  Tablespoons all-purpose flour
1  cup milk
2  Tablespoons butter
Hot sauce
Salt and Pepper


In a skillet or pot, render bacon until semi-crispy.

Add in your flour, garlic, and shallots. Let that cook for a few minutes before adding the milk. Keep stirring until flour is cooked out.

Season with salt and pepper to taste. Finish with butter and a few dashes of hot sauce.
