Valentine’s Day Meal at Home

Trying to get a dinner reservation for February 14th at the most popular restaurant in town? Not so much. There’s one table that doesn’t require a reservation on Valentine’s Day: yours! Luckily, you don’t need to go out to have a memorable meal. If you’re planning a night in with your sweetie, these delicious dishes will make your meal just as memorable as if you had gone out.  Try this easy meal of Garlic Butter Salmon with Garlic Roasted Potatoes and Lemon Parmesan Asparagus. Then end the evening with a romantic Valentine’s Day Chocolate Martini Cocktail and you’re sure to fall in love.

Lemon Parmesan Asparagus

INGREDIENTS:

1 pound asparagus, trimmed
2 tablespoons olive oil
Kosher salt and ground black pepper, to taste
3 cloves garlic, pressed
Juice of 1 lemon, or more, to taste
4 tablespoons freshly grated Parmesan 

INSTRUCTIONS:„

1. Preheat oven to 400 degrees. Lightly oil a baking sheet 

2. Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, gently toss to combine. Place into oven and roast about 10 minutes, until tender and crisp. Toss with garlic, lemon juice and Parmesan and serve immediately.
