Valentine’s Day Meal at Home

Trying to get a dinner reservation for February 14th at the most popular restaurant in town? Not so much. There’s one table that doesn’t require a reservation on Valentine’s Day: yours! Luckily, you don’t need to go out to have a memorable meal. If you’re planning a night in with your sweetie, these delicious dishes will make your meal just as memorable as if you had gone out.  Try this easy meal of Garlic Butter Salmon with Garlic Roasted Potatoes and Lemon Parmesan Asparagus. Then end the evening with a romantic Valentine’s Day Chocolate Martini Cocktail and you’re sure to fall in love.

Garlic Butter Salmon in Foil

INGREDIENTS:

1/2 cup unsalted melted butter
1 tablespoon brown sugar
1 tablespoon lemon juice
2 cloves minced garlic
1/2 teaspoon fresh rosemary
1/2 teaspoon fresh thyme
Kosher salt and ground black pepper, to taste
2 pounds salmon
2 tablespoons chopped fresh parsley leaves 

INSTRUCTIONS:„

1. Preheat oven to 375 degrees. Line a baking sheet with foil. 

2. In a small bowl, whisk together butter, brown sugar, lemon juice, garlic, thyme, rosemary, salt and pepper. 

3. Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the butter mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed. 

4. Place into oven and bake until cooked through, about 15-20 minutes. Garnish with parsley and serve immediately.
